SEASONS
At ERTH, we follow the seasons and let our range change throughout the year. We believe there is something special about working with ingredients when they are at their very best, when the flavour, quality, and feeling are exactly right.
That is why we adapt our offering according to the season, both in the butcher shop and in the restaurant. When summer arrives, we place extra focus on carefully selected meat for the grill, and ahead of Christmas, we build a range of flavours and ingredients that belong to the season.
For us, a living and ever-changing range is an important part of the experience. It creates variety, inspiration, and a natural connection to the rhythm of the year, and always gives you a reason to come back and discover something new.
REGENERATIVE AGRICULTURE
Regenerative agriculture is not a single measure, but rather about combining farming methods and cultivating the land in as varied a way as possible in order to increase carbon sequestration and reduce environmental impact. This is done by using technologies that improve the soil and reduce the risk of drought and erosion.
